Wood Smoked Ham

Allow 1/2 to 3/4 lb per serving for bone-in hams and 1/3 to 1/2 lb for boneless.

Cooking Instructions

  • Preheat oven to 325F.
  • Place ham fat side up on a rack in a shallow roasting pan.
  • Bake 15-18 mins per lb for whole hams or 18-25 mins for half hams.
  • To glaze baked ham, pour drippings from pan and discard.
  • Score ham by cutting diamond shapes about 1/4 inch deep through fat.
  • Spoon desired glaze over ham and return to oven.
  • Bake an additional 15-20 mins.

Pineapple Glaze

1 cup firmly packed brown sugar

3/4 cup drained crushed pineapple

in a small bowl combine ingredients & mix well. Brush glaze on ham during the last 15-30 mins of cooking.

Cranberry Glaze

1/2 cup cranberry juice cocktail

1/2 cup firmly packed brown sugar

1/2 tsp dried mustard

In a small saucepan, combine all ingredients & bring to a boil.

Reduce heat to low, simmer for one minute or until all the sugar is dissolved, stirring constantly. Brush ham with part of glaze. Bake for 25-30 mins basting frequently.

Brown Sugar Glaze

1 cup firmly packed brown sugar

2 TBSP all purpose flour

1/2 tsp dry mustard

1/8 tsp dry sherry, vinegar or water

In a small bowl, combine all ingredients & mix well. Brush glaze on ham during the last 15-30mins of cooking.

How to Roast a Basic Turkey

Preheat the oven to 325°F. In a large roasting pan, place thawed turkey, breast side up and tent with a piece of aluminum foil. Bake turkey using the chart below. Remove foil during last hour of cook time. Cook until meat thermometer inserted into the thickest part of the thigh reads 170°F.
